Banana & egg pancakes

If you are on pinterest/tumblr, I’m sure you’ve come across these two ingredient pancakes at one point! I finally gave in and tried them out.


I cut up one banana, mashed it, then mixed it with one large egg.

I recommend pouring just a litttttle bit in the pan. As thin as you can make them! I accidentally poured too much and they were a pain to flip!

Cook/flip until both sides are a nice brown! Loved them, definitely something different!

Weekend Recap!

Friday night my sister, brother in law and two nieces came into town to spend the weekend!

On Saturday we went car shopping, I ended up choosing a 2003 Chevy Impala.

Since I was exhausted after running around town, I fell asleep extremely early, so Sunday morning we headed to the beach.

Now I’m home, cleaning and working on the website!

A healthier pizza choice

If you know me, you know pizza is my all time favorite food. I have such a weakness for it, but finally!! I have found a healthier way to eat it.

While doing my biweekly shopping at Wal-Mart, I came across these amazing things called Flatouts! Added pizza sauce (1/4 cup, 30 calories), mozzarella cheese (1/4 cup, 80 calories) and turkey pepperoni (17, 70 calories)…. Baked at 350 for about 10 minutes or until golden brown… YUM!! So please, if you are trying to eat healthy and craveeee pizza, try this! It’s amazing! And only 270 calories.

I haven’t forgotten about this place! Lacking motivation, so of course blogging is the last thing I want to do.

Some good news! I joined Planet Fitness so I’m back to working out!! I hadn’t weighed myself for weeks, thinking I was gaining the entire 50 pounds + some back, but I weighed myself on Friday and I’m 219, DOWN A POUND! What the heck? Guess I wasn’t doing as bad as I thought.
I really love Planet Fitness. The workers are extremely nice… and NORMAL! Also, I don’t feel like a total fat ass when I walk in, which is always nice.

Work has been absolutely insane. I’m hoping it gets a little better once Summer gets here. I need a vacay!

My sister, two nieces and brother in law will be here this weekend for the girl’s Spring Break! It shall be interesting, but I’m excited to see them! Hopefully we will be getting a car on Saturday. Things will be so much easier around here once we have one. Sighhhhh.

It’s raining out and that calls for a nap, sooo, happy Sunday!
